Quality of Rices Marketed in Korea

Abstract
The quality of 54 milled rice sample on sale in Korea was investigated by measuring the percentage of chalky kernels, percentage of kernels, and number of heat damaged kernel and by grading according to USDA inspection guide. The percentage of broken kernel was the most influential characteristics in grading, followed by the percentage of chalky kernel. Only 2 out of 54 samples were graded as grade 1 and 31, 18, 2 and 1 samples were determined as grade 2, 3, 4 and 5 respectively. While the international market price for milled rice si related to the grade, no relationship between price and the grade of rice was found in milled rice currently marketed in Korea. To improve the quality of milled rice marketed in Korea, the reduction of broken kernels and a detailed inspection guide than the current inspection guide were suggested.
